One thing I would like to mention though---------when I lived in Sneads Ferry, N.C. a popular bumper sticker read, "Friends don't let friends eat imported shrimp". Farm raised, imported shrimp can't compare to fresh off the trawler, Atlantic, willd caught shrimp. Your combination of shrimp, cheese and grits sound great. In fact, I don't think I have ever seen it for sale. I had to have a look on the net to see what it was and they equate it to polenta so that gives me a bit of an understanding of what it is.
