You know it’s Easter time…

When you see Starburst Jellybeans in the stores!

I am not usually a fan of jelly beans but boy do I love the Starburst ones…they are the only kind I will eat. I first remember these coming out when my sister and I were in high school. My Mom would buy them and we both quickly discovered that the purple ones (grape flavored) were the best so we would pick those out first then move on through to our other favorites leaving the least favorite (the dark red ones) for Dad to eat. needless to say if my Mom found us pick through them she was none too happy.

Well I bought a bag Sunday at the store and filled up my cute bunny candy dish. I cannot keep my hands out of the dish! I am addicted!

And I still find myself picking out the purple ones….

We Wish you a Merry Christmas!

This shall be my last post before the holidays. Two more days to work at the bakery and then I can enjoy myself finally! This week has been exhausting; finishing the shopping, wrapping and baking while working everyday and still trying to stay in the holiday spirit! Yesterday it finally clicked and it really felt like Christmas. I was making pies in the bakery and I looked around at all of us buzzing around and it was like we were little elves. I decided to not take these next two days to serisouly and just enjoy them, sure I have to work and we will probably be swamped but I am wearing one of Evan’s Santa hats, who can get mad at someone in a Santa hat!

I finished my baking for the families, 2 pies, a cheesecake and an ice cream cake. I will have write ups on them next week…since these are all new recipes for me!

I just finished wrapping the last give and our tree has a heap of presents underneath! Evan and I are having our Christmas tonight. We were engaged on Christmas Eve Eve two years ago so I always like to exchange our gifts that night, away from all of the craziness. We will make a nice steak dinner and hopefully I can con him into watching Charlie Brown Christmas and taking me out to look at lights :)

Rosemary Garlic Stuffing

I did not grow up in a “stuffing” family. No one in my family is a big fan of any kind of stuffing, or bread pudding or anything with soggy bread. However, my husband actually likes this stuff…go figure! So since this was our first Thanksgiving together as man and wife I thought I would make something that he enjoyed in addition to the turkey leg and rolls. I saw the recipe on FoodTV last weekend for Giada’s Ciabatta Stuffing with Chestnuts and Pancetta and had all intentions of making it step by step with the exact ingredients. However something about working ten hours shifts at the bakery kept me from getting to the grocery store and I was not about to make Evan go on a wild goose chase for chestnuts. So I told him to just get some bacon and I would bring some bread home from the bakery to use.

I think it actually turned out quite well. I brought a loaf of farmhouse white bread and our rosemary garlic wheat bread, I only used half of each loaf. Though only Evan and I ate it, my Mom tried it and said it was quite good. Not mushy due to the large chunks of bread and the small amount of chicken broth I used. I will probably half the recipe in the future so we aren’t stuck with an entire casserole of leftover stuffing.

Rosemary Garlic Stuffing
Adapted from this
recipe

6 tablespoons (3/4 stick) butter
8 ounces bacon, cut into 1/4-inch dice
1 large onion, finely chopped
2 carrots, peeled and finely chopped
3 celery stalks, finely chopped
1 tablespoon dried rosemary leaves
3 garlic cloves, chopped
1 pound day-old bread, cut into 3/4-inch cubes
2/3 cup freshly grated Parmesan
1 cup (or more) canned low-salt chicken broth
Salt and freshly ground black pepper
2 large eggs, beaten to blend

Preheat oven to 350 degrees F.

Butter a 15 by 10 by 2-inch glass baking dish. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the bacon and saute until crisp and golden, about 10 minutes. Using a slotted spoon, transfer the pancetta to a large bowl. Drain fat from skillet and melt the remaining butter in the same skillet over medium-high heat. Add the onions, carrots, celery, rosemary, and garlic. Saute until the onions are very tender, about 12 minutes. Transfer the onion mixture to the large bowl with the bacon. Add the bread and Parmesan and toss to coat. Add enough broth to the stuffing mixture to moisten. Season the stuffing, to taste, with salt and pepper. Mix in the eggs.

Transfer the stuffing to the prepared dish. Cover with buttered foil, buttered side down, and bake until the stuffing is heated through, about 30 minutes. Uncover and continue baking until the top is crisp and golden, about 15 minutes longer.

PS- I neglected to take a picture of the final product, so here is a pic of our Thanksgiving table. Please note my 20 year old sister’s chocolate milk on the table…so mature she is.

PSS- My Mom was so excited her dining room and kitchen would be “famous” since I am posting these pics online. I don’t know how “famous” this blog is yet, but rest assure her beautiful kitchen and dining room have been well documented! Thanks Mom!

Happy Thanksgiving!

Today is a food lovers dream. My Mom had most of Thanksgiving done by the time I got here yesterday. I worked ten hours at the bakery on Tuesday, getting off at 10pm them turned right around and went in at 5am to knead bread. I was so tired yet so thankful that I had the chance to do something that I love to do, even though I was dog tired and didn’t get to see my husband at all.

I got to sleep on the drive to VA which was really nice. We had baked pasta and asiago pesto bread from the bakery, I think I brought about 15 pounds of bread from the bakery!

This morning after sleeping in till about 10 this morning thanks to my loving Evan we had cinamon swirl french toast and coffee. After loafing a bit, Mom and I started on the rest of dinner while Evan and my Dad started on the fried turkey. Fried turkey is THE way to cook turkey, I will have detailed instructions and pictures later this weekend.

Our menu consisted of:
Fried Turkey with Blackened Seasoning
Sweet Potato Casserole
Garlic Mashed Potatoes
Roasted Broccoli
Cranberry sauce, fresh and from the can for my sister
Peas and Shallots
Rosemary Garlic Stuffing
Wheat and White Rolls

I will have pictures up this weekend.

I am so thankful for the past year and I look forward to the year to come. I have a wonderful husband who I am madly in love with, parents who are so supportive and understanding and unconditionally loving, a sister who is my best friend and my constant source of laughter, and two dogs that are always there to brighten my day. And I am honestly very thankful for the events that have happened in the past because I believe they have not only made my stronger but have forced me to be a happier person.

The Christmas List

About this time of year comes the question “what do you want for Christmas?” It’s a funny sort of question when you get older. When I was young it was easy, Barbies, new legos, My Little Pony, and maybe a new dance leotard. When I was in high school it was jeans, running shoes, and CD’s. Even the past couple of years it was not too hard…housewares. (Who knew one could get so excited about new pots and a new set of sheets). Now as we are coming close to our one year anniversary in our house and past the 6 month mark of our marriage we are pretty set on household stuff. So this year the question is kinda daunting.

My parents usually get me a nice business suit, but times are changing in the corporate world and no one is dressing up like they used to. I have also determined this “corporate world” is not necessarily my cup of tea. Clothes are always a safe bet, I love sweaters and jackets and can never have enough shoes (size 7.5!). There are a few house things I would like, more out of necessity than anything, a carpet cleaner, a new dutch oven(ok thats a long shot), and maybe a serger.

My list can never touch my sister’s list, she takes pride in the detail and description of her items, down to color pictures and sometimes items locations. It has come to be more of a joke, but she is definatly a girl with a plan!

I am much more into the thoughtful gifts now it seems. One of my favorite gifts from our wedding was a painting my sister did for us. I absolutely love it and everytime I look at it I think about her and our wedding.

Our lives have so much “stuff’ in them that I wonder if we need anymore.

Nonetheless, I am looking forward to Christmas, I will always be that 10 year old kid that wakes everyone up at 6:30am to rip open presents, but I think I get more joy out of seeing others open theirs.
